Tomato Onion Tart

Ingredients

1 sheet puff pastry

2 large tomatoes, sliced

1 sweet onion, thinly sliced

1 cup shredded Gruyère or mozzarella cheese

2 tbsp olive oil

1 tsp thyme

Salt and pepper

Fresh basil
Instructions

Cook pasta according to package directions. Drain and reserve ½ cup pasta water.

Heat olive oil in a large skillet over medium heat.

Add garlic and sauté for 30 seconds.

Add zucchini, squash, peppers, and asparagus. Cook 4–5 minutes until tender-crisp.

Toss in cherry tomatoes and cook 1 minute more.

Add pasta to skillet and toss with vegetables.

Add parmesan cheese and a splash of pasta water for a silky sauce.

Season with salt and pepper. Garnish with basil and serve.
