Pasta Primavera

A fresh, vibrant pasta loaded with seasonal vegetables, olive oil, garlic, and a touch of parmesan.Light, colorful, and perfect for any night of the week.

Ingredients

  • 8 oz linguine or fettuccine

  • 1 zucchini, sliced

  • 1 yellow squash, sliced

  • 1 red bell pepper, sliced

  • 1 cup asparagus tips

  • 1 cup cherry tomatoes, halved

  • 3 cloves garlic, minced

  • 3 tbsp olive oil

  • ½ cup grated parmesan cheese

  • Salt and pepper to taste

  • Fresh basil for garnish

Instructions

  1. Cook pasta according to package directions. Drain and reserve ½ cup pasta water.

  2. Heat olive oil in a large skillet over medium heat.

  3. Add garlic and sauté for 30 seconds.

  4. Add zucchini, squash, peppers, and asparagus. Cook 4–5 minutes until tender-crisp.

  5. Toss in cherry tomatoes and cook 1 minute more.

  6. Add pasta to skillet and toss with vegetables.

  7. Add parmesan cheese and a splash of pasta water for a silky sauce.

  8. Season with salt and pepper. Garnish with basil and serve.
